My son heralded this recipe "delicious!" as he thrust his spoon into the air! This one is really easy, hearty, and, of course, it's gluten-free, casein-free, and soy-free. (and it's egg-free, too, for anybody dealing with that!)
Ingredients:
1 large potato, peeled & chopped
1/2 small bag of peeled baby carrots
1 yellow onion, peeled & quartered
2-3 green onions (the long, skinny ones), chopped
1 pkg. boneless, skinless chicken thighs
1 container Imagine chicken broth (buy some HERE)
2 Tbsp. salt
Herbs/spices of your choice
Directions:
Put the potatoes in the bottom of the crock pot - you need enough to cover the bottom. Cut up the chicken and put it on top of the potatoes (Using kitchen scissors to cut the chicken makes this easy. Just hold a chicken thigh over the crock pot and cut it with the scissors into the pot.) Dump some baby carrots on top of the chicken. Put the quartered onion on top. Add the chicken broth to cover everything and come close to the top of the pot. Throw in some green onions, your herbs/spices of choice, and the salt. Cover and cook on LOW for about 8-9 hours.
Makes enough for 4 with leftovers!

This soup looks yummy, as do all your Turkish-influenced dishes. It sounds like your children (who are adorable, BTW) are pretty adventurous eaters. Sounds like you are getting great results, especially with your son's speech!
