Salmon with Zucchini



Salmon, high in Omega 3s, is one of my daughter's favorite. I'm still working on my son, but he actually DID try the zucchini last night -- first time EVER for him! I am hopeful! This is gluten-free (GF), casein-free (GFCF), soy-free (GFCFSF), egg-free, corn-free....basically free of everything but salmon, zucchini, olive oil and salt!

Ingredients
2 lbs. salmon fillet (less if you don't want leftovers)
1 lb. zucchini (quartered and/or sliced)
Olive oil
Salt

Directions
Coat bottom of 9x13 glass baking dish with olive oil. Put salmon in dish. Put zucchini on top and around salmon. Drizzle more olive oil on top of everything. Salt to taste. Cook in 450 degree oven for approximately 20-30 minutes, or until salmon flakes easily with fork. Serve with quinoa.

- Serves family of four (2 adults, 2 kids) with leftovers for everybody the next day!
