I was surprised how easy it was to make this. My hubbie and I thought this was yummy and had potential; kids didn't seem to like it, although I hadn't added any salt or sweetner or anything -- it was straight macadamia nut milk. This is naturally gluten-free, casein-free (GFCF), and soy-free.
Ingredients:
raw, whole macadamia nuts (as many as you want)
water
Directions:
Soak your macadamia nuts in water overnight; use just enough water to cover the nuts. I used another glass to weigh them down in the water (see photo). The next day, put the nuts + water in a blender/food processor. Pulse until well mixed. Use a cheesecloth to strain the "milk" from the pulp. (Don't laugh, but because I didn't have a cheesecloth, I used a clean cloth diaper! Don't worry, we never used cloth diapers as actual diapers, just as burp cloths!)
Notes:
You will make as much milk as you have nuts. Save the pulp and use it for something else. (FYI, obviously, macadamia nut milk is expensive. A cheaper option would be homemade rice milk, done the same way as this, but I think you cook the rice first. I will try this next!)
