GFCFSF Protein Rice Krispy Bars



This recipe was posted to the GFCFKids Yahoo Group by Chef Amy. I tried it today, and it is GREAT! I'm psyched to have this recipe, since this will work well for breakfast as well as snacks. It's sweet enough to be tasty but is also packed with nutritious stuff (including protein). I subbed 1 cup of amaranth o's for 1 cup of rice cereal to add a bit more protein.

Ingredients:
1/2 cup agave nectar
1/2 cup cashew butter [some other nut butter would most likely be fine too]
1/3 cup brown sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 Tbsp. cocoa
1/8 tsp. sea salt
2 Tbsp. shredded coconut
1 tsp. GF vanilla
1/4 cup sunflower seeds/kernels
2 Tbsp. flax seed meal
2 cups Erewhon Crispy Brown Rice Cereal
1 cup amaranth O's cereal

Directions:
In a saucepan, combine the agave, cashew butter, and brown sugar over medium-low heat. Stir until melted. Add the cinnamon, nutmeg, salt, cocoa, and coconut, and bring to a boil, stirring constantly. Take it off the heat and add the vanilla, sunflower seeds, flax seed, amaranth, and rice cereal. Stir till all combined. Put into a 9x11 glass baking dish. Let it cool then cut into squares (or larger bars).

Notes:
I got the tips of my fingers a bit wet to press it down into the pan. Makes about 24 squares.
