Lentil and Beef "Quesadillas"


I created this on the fly after my Turkish lentils (recipe HERE) got totally messed up. I was trying to save time and had made them in a crock pot, cooking all night, and all the water had boiled out. So I was left with lentil and beef mush/paste.

I mashed this lentil paste up with a potato masher and added a bit of sweet potato baby food (not sure why). Then I made Sarah's wraps (recipe HERE) and spread the mixture on half the wrap and folded it. (Note: My wraps were much thicker than Sarah's; I made them from memory!)

My 3-year old ate this up!
