GFCFSF Chocolate Pudding


This is how I do gluten-free, casein-free (GFCF), soy-free (GFCFSF) pudding. Note: This pudding is a good "vehicle" for powdered probiotics.

Ingredients
1 pkg. Dr. Oetker brand organic chocolate pudding (only chocolate is soy-free)
2 cups cold milk sub (I use coconut milk or hempmilk)
1 scoop nut butter (optional)

Directions
I just follow the directions on the package. Dump the package of pudding mix into a small pot. Add the "milk." Stir constantly over medium heat. (If you're adding nut butter, do it once the pudding is mixed and warm.) Once you see bubbles on the top, stir for one minute more then take it off the heat. Let it sit for 2 minutes then stir it. Let it sit for 3 more minutes then stir again. Then pour into containers and refrigerate.

What I Use
I use these very small containers made in Japan (see photo). You can see how small they are in relation to the can opener. They give you a few bites of pudding. Just enough to be a yummy treat but not too much to cause major sugar problems.

What I Do
My NT daughter is the one who likes chocolate pudding; my son (the one on this diet) doesn't like chocolate very much (weird, I know!). So I make this for my daughter. I make it on the weekend and put the containers in the fridge. Every night when I make her lunchbox for the next day, I mix in her probiotic and put it in the lunchbox and into the fridge. She loves the taste, and I love knowing that she's getting some probiotic in the middle of the day!
