I got a sweet potato at the store, trying to be cool. (I don't normally use sweet potatoes.) I wasn't sure what to do with it, so here's what I did:
I peeled it, boiled it till very soft, then mashed it with a potato masher. I added a bit of cinnamon and brown sugar, too.
Hubbie and I liked this straight, but the kids did not. But I kept the bowl in the fridge and found all sorts of sneaky ways to mix the mash into all sorts of stuff. Crock pot things, pancakes, pasta sauce, and I even used it as a coating for some homemade chicken nuggets (which I will post the recipe for if I can figure out/remember what I did!).
I highly recommend this as a simple, cheap way to add a little veggie action to your kids' food every now and then. Of course, you could also use sweet potato baby food, but this was just so much cooler, don't you think?

ooo...we buy them in bulk now...jaden LOVES these just like regular french fries...he likes them fried best, but has eaten them baked from the oven...it just takes alot longer! they are a daily request...i've also added carrots cut the same and he liked that, too!
