GFCFSF Cream of Beet Soup


 


I got some beets from our CSA farm share this summer. I don't think I had ever eaten a beet before???? My hubbie told me he loved, loved, loved beets and that they're healthy for some reason or another. So I looked online for a beet recipe. I found one for cream of beet soup on RecipeSource.com and made it GFCF. The kids didn't go for this so much, but hubbie and I thought it was good. Beets have kind of an "earthy" taste, I discovered.

Ingredients
1 lb. beets, peeled and coarsely chopped (about 3 beets)
1 large onion, coarsely chopped
1 qt. (32 oz.) GF chicken or veggie broth (I use Pacific brand)
1/2 cup MimicCreme (I get on Allergy Grocer)
1/4 cup chopped fresh herbs (I used dill)
3 Tbsp. olive oil
2 Tbsp. GF red wine vinegar
1 tsp. dried or chopped fresh thyme (I used dried)
Salt
Pepper

Directions
Cook beets, onion, and thyme in olive oil in a pot over medium heat until the onion begins to soften slightly (about 10 minutes). Add broth, partially cover pot, and simmer slowly for about 30 minutes, until the beets are completely soft (try to smoosh them against the side of the pot with a wooden spoon). Put everything into a blender and puree. For smooth textured soup, run it through a mesh strainer before putting back into the pot. Add the MimicCreme and vinegar and bring soup back to a simmer. Season with salt and pepper.

Yum! I love beets! This sounds pretty darned good. I am sure my son would not touch it with a ten foot pole; but, I will make it and try it out, you never know!
